King Trumpet (Pleurotus eryngii), also called King Oyster, is the heavyweight of the oyster family. Instead of delicate caps, it grows dense, white stems with a firm, almost scallop-like bite and a rich savory flavor. It holds its texture through grilling, searing, and roasting, which makes it a favorite with chefs.

Cultivation guidelines
- Substrates: Sterilized supplemented hardwood sawdust or Master's Mix. King Trumpet performs best on sterilized, supplemented media rather than straw.
- Colonization: 70–75°F (21–24°C) in the dark, typically 2–4 weeks.
- Fruiting: 55–65°F (13–18°C), 85–90% humidity, and moderate fresh air. Slightly reduced fresh air encourages the thick stems King Trumpet is known for.
- Harvest: While caps are still slightly domed, before they flatten.
These are general guidelines; optimal conditions vary with your setup.
Storage and handling
- Inspect the bag on arrival for damage or contamination.
- If not using right away, refrigerate at 35–40°F (2–4°C).
- For best results, use within 1–4 weeks of receipt.
